Pancakes: A Morning Delight

Start your day on a high note with these fluffy and delectable pancakes. Crafted with all-natural ingredients, a hint of turmeric, and a burst of vanilla, this recipe promises a fluffy texture and rich flavor. Whether you're kickstarting your day or enjoying a lazy Sunday brunch, these pancakes will surely bring happiness to your morning.

Ingredients:

  • 120g all-purpose flour/plain flour
  • 1.5 teaspoons baking powder
  • 10g sugar
  • ½ teaspoon salt
  • 1 egg (separate yolk & white) – at room temperature
  • 120ml fresh milk
  • 20ml cooking oil
  • 10g melted butter
  • ½ teaspoon vanilla extract
  • 1 teaspoon Miss Vietspice - Organic turmeric powder
  • Juice from one lemon
  • Apples + butter + sugar for caramel apple sauce (optional)
  • If not using whipped egg white, add 1/8 teaspoon baking soda

Method: 

  • Combine the dry ingredients: flour, turmeric powder, baking powder, sugar, and salt.
  • In a separate bowl, mix the wet ingredients: egg yolk, milk, vanilla, cooking oil, melted butter, and 1 tablespoon of lemon juice.
  • Incorporate the dry mixture into the wet mixture until well combined.
  • In another bowl, add egg white and a pinch of salt. Whip on medium speed for 30-45 seconds, then add 1/4 teaspoon of lemon juice. Whip on high speed until stiff peaks form, ensuring it doesn't drip when the bowl is turned upside down.
  • Gently fold the whipped egg white into the batter from step (3).
  • Use a flat, non-stick skillet. Lightly brush the skillet with a thin layer of oil or melted butter. Scoop a spoonful of batter onto the skillet and spread evenly. Wait for the bottom to cook, then flip the pancake to cook the other side.

Tips: Add fruits, honey, Nutella, yogurt,... to accompany the pancakes.
